- 1 can (15 oz / 425g) Corn, drained (or 1 ½ cups frozen corn, thawed)

- 1 can (10 oz / 280g) Mild Diced Tomatoes and Green Chilies (like Rotel), undrained

- 1 cup Salsa (your favorite kind – mild, medium, or hot)

- 1 cup Mild Red Enchilada Sauce (ensure it’s vegan/GF if needed)

- Tofu Pressing: Don’t skip pressing the tofu! Removing excess water allows it to brown better and absorb more flavor. You can use a tofu press or wrap the block in paper towels/a clean kitchen towel, place it on a plate, and weigh it down with something heavy (like books or cans) for at least 30 minutes.

- Rice Choice: Brown rice offers more fiber and nutrients but requires a longer baking time (potentially needing more liquid and closer to 60-70 minutes bake time). White rice cooks faster. Adjust baking time and possibly liquid amount accordingly. Instant rice is generally not recommended as it can become mushy.

- Spice Level: Control the heat by choosing mild, medium, or hot salsa, enchilada sauce, and taco seasoning. You can also add diced jalapeños along with the onions for an extra kick.
Instructions

- Preheat & Prep: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.

- Press the Tofu: If you haven’t already, press your extra-firm tofu for at least 30 minutes to remove excess water. Once pressed, crumble it into small, irregular pieces using your hands or a fork. Aim for a texture similar to ground meat.

- Sauté Aromatics: Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.

- Brown the Tofu: Add the crumbled tofu to the skillet with the onions and garlic. Increase the heat slightly to medium-high. Cook, breaking it up further with a spoon, until it starts to lightly brown and some moisture evaporates, about 8-10 minutes. Stir occasionally.

- Season the Tofu: Sprinkle the taco seasoning (or your homemade blend), salt, and black pepper over the tofu. Stir well to coat evenly and cook for another 1-2 minutes to toast the spices and infuse the tofu with flavor. Remove the skillet from the heat.

- Combine Rice Base Ingredients: In the prepared 9×13 inch baking dish, combine the uncooked rice, rinsed and drained black beans, drained corn, undrained diced tomatoes and green chilies, salsa, vegetable broth, and water (or extra broth). Stir everything together until well mixed.

- Incorporate Tofu Mixture: Add the cooked tofu mixture from the skillet into the baking dish with the rice mixture. Stir again gently to distribute the tofu evenly throughout the rice and other ingredients.

- Add Enchilada Sauce: Pour the enchilada sauce evenly over the top of the mixture in the baking dish. Don’t stir it in completely; let it seep down naturally.

- First Bake (Covered): Cover the baking dish tightly with aluminum foil. This traps the steam, which is crucial for cooking the rice properly.

- Bake: Place the covered dish in the preheated oven.

- If using White Rice: Bake for 45-55 minutes.

- If using Brown Rice: Bake for 60-70 minutes (check instructions on your rice package).
The rice should be tender, and most of the liquid should be absorbed. Check by fluffing a small section with a fork. If the rice is still hard or there’s excessive liquid, cover and bake for another 10-15 minutes.

- Bake: Place the covered dish in the preheated oven.

- Add Cheese & Second Bake (Uncovered): Carefully remove the foil. Sprinkle the shredded cheese (or vegan alternative) evenly over the top of the casserole.

- Final Bake: Return the casserole to the oven, uncovered. Bake for another 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden brown.

- Rest: Once out of the oven, let the casserole rest for 5-10 minutes before serving. This allows the flavors to meld further and makes it easier to scoop.

- Garnish and Serve: Garnish generously with your chosen toppings (cilantro, green onions, avocado, etc.) and serve hot.
