Ingredients
Scale
- 1 lb ground turkey or chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup bell pepper, chopped
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 cups mixed vegetables (like zucchini, carrots, or spinach)
- Optional: avocado and cilantro for topping
Instructions
- Brown the Meat: In a large pot, brown the ground turkey or chicken over medium heat. This process usually takes about 5-7 minutes. Ensure the meat is fully cooked and no pink remains.
- Sauté Aromatics: Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent and fragrant, usually around 3-4 minutes.
- Combine Main Ingredients: Stir in the can of diced tomatoes (including the juices), vegetable broth, black beans, corn, and chopped bell pepper. Mix them well to ensure even distribution of ingredients.
- Season the Soup: Add the chili powder and cumin to the pot. Season with salt and pepper according to your taste preference.
- Simmer: Bring the mixture to a boil, then reduce the heat to a simmer. Allow it to cook for 20-30 minutes, letting the flavors meld together beautifully.
- Add Mixed Vegetables: Incorporate the mixed vegetables such as zucchini, carrots, or spinach. Cook for an additional 5-10 minutes until the vegetables are heated through and tender.
- Serve: Ladle the hot soup into bowls and top with optional avocado slices and chopped cilantro for a fresh and creamy finish.
