Spicy Southwestern Hamburger Vegetable Soup recipe

  • Author: Olivia

Ingredients

Scale

  • 1 lb ground turkey or chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup bell pepper, chopped
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups mixed vegetables (like zucchini, carrots, or spinach)
  • Optional: avocado and cilantro for topping

Instructions

  1. Brown the Meat: In a large pot, brown the ground turkey or chicken over medium heat. This process usually takes about 5-7 minutes. Ensure the meat is fully cooked and no pink remains.
  2. Sauté Aromatics: Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent and fragrant, usually around 3-4 minutes.
  3. Combine Main Ingredients: Stir in the can of diced tomatoes (including the juices), vegetable broth, black beans, corn, and chopped bell pepper. Mix them well to ensure even distribution of ingredients.
  4. Season the Soup: Add the chili powder and cumin to the pot. Season with salt and pepper according to your taste preference.
  5. Simmer: Bring the mixture to a boil, then reduce the heat to a simmer. Allow it to cook for 20-30 minutes, letting the flavors meld together beautifully.
  6. Add Mixed Vegetables: Incorporate the mixed vegetables such as zucchini, carrots, or spinach. Cook for an additional 5-10 minutes until the vegetables are heated through and tender.
  7. Serve: Ladle the hot soup into bowls and top with optional avocado slices and chopped cilantro for a fresh and creamy finish.
