Ingredients

        • Choose your favorite brand: Sprite, 7-Up, Starry, or even a generic store brand will work perfectly. The crisp, citrusy notes are essential. For a lower-calorie version, diet or zero-sugar varieties can be used, though this may slightly alter the final taste and sweetness balance.

    • Granulated Sugar: 1/2 cup (100g) – To create a simple syrup that will blend seamlessly for consistent sweetness.
        • Why simple syrup? Dissolving sugar directly into cold soda can be tricky and may result in a gritty texture. Simple syrup ensures the sugar is fully incorporated.

    • Water: 1/2 cup (4 fl oz or 120ml) – This will be combined with the sugar to make the simple syrup.

    • Coconut Extract: 1 to 2 teaspoons – This is the magic ingredient that imparts that signature tropical flavor.
        • Start with less, add more to taste: The potency of coconut extract can vary by brand. It’s better to start with 1 teaspoon and add more if you desire a stronger coconut presence. Be sure to use extract, not coconut water, coconut milk, or coconut-flavored syrups, as these will yield a different result.

    • Blue Food Coloring: 4-6 drops (or to desired color) – For achieving that iconic, vibrant blue hue.
        • Liquid or gel: Both work well. Gel food coloring is more concentrated, so you might need fewer drops. Add it gradually until you reach your preferred shade of oceanic blue.

    • Ice: Plenty of it! – Ocean Water is best served ice-cold for maximum refreshment.

    • Optional Garnishes:
        • Swedish Fish or gummy sharks

        • Maraschino cherries

        • Lemon or lime slices/wedges

        • Pineapple chunks

        • Cocktail umbrellas for a festive touch

Part 1: Crafting the Coconut Simple Syrup

While some recipes add coconut extract directly to the soda, creating a quick coconut-infused simple syrup ensures the sugar is fully dissolved and the coconut flavor is evenly distributed throughout your drink.

    1. Combine Sugar and Water: In a small saucepan, combine the 1/2 cup of granulated sugar and 1/2 cup of water.

    1. Heat Gently: Place the saucepan over medium heat. Stir continuously until the sugar has completely dissolved. You don’t need to bring it to a rolling boil; just heat it enough for the sugar to dissolve. This should take about 2-3 minutes.

    1. Cool Slightly and Add Flavor: Remove the saucepan from the heat. Allow the simple syrup to cool for a few minutes. Once it’s no longer piping hot (warm is fine), stir in 1 to 2 teaspoons of coconut extract. Start with 1 teaspoon, taste (carefully!), and add more if you prefer a stronger coconut flavor.

    1. Set Aside: Let the coconut simple syrup cool down further. For best results, allow it to cool to room temperature or even chill it in the refrigerator if you have time.

Part 2: Assembling Your Ocean Water

Now for the fun part – bringing it all together!

    1. Prepare Your Pitcher/Glasses: If making a batch, grab a large pitcher. If making individual servings, prepare your glasses.

    1. Add Ice: Fill your pitcher or individual glasses generously with ice. This drink is best served very cold.

    1. Pour in the Soda: Gently pour the 4 cups (32 fl oz) of lemon-lime soda over the ice. Pouring it slowly or down the side of the glass/pitcher can help preserve some of the carbonation.

    1. Introduce the Coconut Syrup: Slowly pour the cooled coconut simple syrup into the soda.

    1. Time for the Blue!: Add 4-6 drops of blue food coloring. Start with fewer drops and add more, one drop at a time, stirring gently after each addition, until you achieve your desired vibrant ocean blue. Remember, a little goes a long way, especially with gel food coloring.

    1. Stir Gently: Give the mixture a gentle stir to combine all the ingredients and distribute the color evenly. Try not to over-stir, as this can cause the soda to lose its fizz more quickly.

    1. Taste and Adjust (Optional): Give your Ocean Water a taste. If you feel it needs more coconut flavor, you can add another tiny drop of coconut extract (mix it well). If it’s not sweet enough (unlikely with the simple syrup, but possible depending on your soda), you unfortunately can’t add more granulated sugar at this stage, but you could add a tiny bit more of a pre-made plain simple syrup if you have some. It’s generally best to get the syrup right initially.
