Instructions

  1. Sauté Aromatics:
    In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become soft and fragrant. This usually takes about 3-4 minutes.
  2. Toast the Rice:
    Stir in the long-grain rice, allowing it to cook for 1-2 minutes. The rice should be lightly toasted, which will enhance its texture and flavor.
  3. Add Liquid and Seasonings:
    Pour in the vegetable broth, lemon juice, and lemon zest. Season the mixture with salt and pepper to taste.
  4. Cook the Rice:
    Bring the mixture to a boil, then cover the pot and reduce the heat to low. Let it cook for 15-20 minutes, or until the rice is tender and the liquid is fully absorbed.
  5. Finish and Serve:
    Fluff the rice with a fork and garnish with freshly chopped parsley before serving. The parsley adds a fresh touch and a pop of color to the dish.
