Instructions
- Cook the Pasta
- Follow the package instructions to cook 8 oz of your chosen pasta. Once cooked, drain the pasta and set it aside.
- Prepare the Pistachio Sauce
- In a blender, combine the following ingredients: 1 cup of shelled unsalted pistachios, 1 cup of heavy cream (or coconut cream), 2 minced garlic cloves, and a pinch of salt and pepper.
- Blend the mixture until smooth, ensuring that the pistachios are finely ground and well-incorporated into the cream.
- Combine Pasta and Sauce
- In a large pan, heat the pistachio sauce over low heat.
- Add the cooked pasta to the pan, stirring to ensure the pasta is evenly coated with the sauce.
- Add Parmesan Cheese
- Stir in 1/2 cup of grated Parmesan cheese (or nutritional yeast for a vegan twist) until it melts into the sauce, creating a creamy consistency.
- Serve and Garnish
- Serve the pasta hot, garnished with fresh basil leaves for an added touch of freshness and color.
