Instructions

  1. Cook the Pasta

    • Follow the package instructions to cook 8 oz of your chosen pasta. Once cooked, drain the pasta and set it aside.

  2. Prepare the Pistachio Sauce

    • In a blender, combine the following ingredients: 1 cup of shelled unsalted pistachios, 1 cup of heavy cream (or coconut cream), 2 minced garlic cloves, and a pinch of salt and pepper.
    • Blend the mixture until smooth, ensuring that the pistachios are finely ground and well-incorporated into the cream.

  3. Combine Pasta and Sauce

    • In a large pan, heat the pistachio sauce over low heat.
    • Add the cooked pasta to the pan, stirring to ensure the pasta is evenly coated with the sauce.

  4. Add Parmesan Cheese

    • Stir in 1/2 cup of grated Parmesan cheese (or nutritional yeast for a vegan twist) until it melts into the sauce, creating a creamy consistency.
