- Fresh strawberries (as many as you want)
- 1 can (400 ml) full-fat coconut milk, refrigerated overnight
- 1 ½ cups chocolate chips
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
1. Prepare Strawberries
- Cut Off the Tops: Begin by cutting off the tops of the strawberries. This will create a flat surface for them to stand on.
- Create a Base: Slice a tiny piece from the bottom of each strawberry to ensure they remain upright.
- Scoop the Inside: Use a small spoon to scoop out a little of the inside, creating a small bowl. Be careful not to scoop through the bottom.
2. Make the Filling
- Open the Coconut Milk: Open the chilled can of coconut milk and scoop out the solid cream into a pot. The liquid can be discarded or saved for smoothies.
- Add Chocolate Chips: Add the chocolate chips to the pot with the coconut cream.
- Melt the Mixture: Melt the mixture over low heat, stirring until smooth.
- Add Flavor: Mix in the vanilla extract and a pinch of salt for added flavor.
3. Fill & Chill
- Dry the Strawberries: Carefully dry the insides of the strawberries to ensure the chocolate mixture adheres properly.
- Fill the Strawberries: Pour the chocolate mixture into each strawberry using a small measuring cup or spoon.
- Chill: Place the filled strawberries in the fridge for 20-30 minutes to allow the chocolate mixture to set.
