Instructions

  1. Preheat your oven to 375°F (190°C). This ensures that the chicken will cook evenly and have a nice, crispy exterior.
  2. Prepare the filling by mixing the spinach, cream cheese, mozzarella, garlic powder, salt, and pepper in a bowl. Ensure that the ingredients are well-combined to get a uniform flavor throughout the filling.
  3. Cut a pocket in each chicken breast. Be careful not to cut all the way through; you want to create a pocket that can hold the filling securely. A sharp knife can help make this process easier.
  4. Stuff the chicken breasts with the cheese mixture. Use a spoon to carefully fill each pocket with the prepared mixture, ensuring that it’s evenly distributed.
  5. Heat olive oil in a skillet over medium heat. The oil should be hot enough to sear the chicken but not so hot that it burns the exterior before the interior is cooked.
  6. Sear the stuffed chicken for 3-4 minutes on each side until golden brown. This step adds a lovely texture and flavor to the chicken.
  7. Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through. Use a meat thermometer to check that the internal temperature of the chicken has reached 165°F (74°C).
