  • 4 large potatoes, peeled and diced
  • 1/2 cup white onion, chopped
  • 1/2 cup celery, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or coconut cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked turkey bacon or veggie bacon, crumbled
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Prepare the Vegetables:

    • In a large pot, combine the diced potatoes, chopped onion, and chopped celery with the chicken or vegetable broth.
    • Bring the mixture to a boil over medium-high heat.

  2. Simmer the Soup:

    • Once boiling, reduce the heat to a simmer.
    • Cook for 20-25 minutes, or until the potatoes are tender.

  3. Mash the Potatoes:

    • Using a potato masher, gently mash some of the potatoes in the pot. This will create a creamier texture for the soup.

  4. Add Cream and Cheese:

    • Stir in the heavy cream (or coconut cream) and shredded cheddar cheese.
    • Cook the mixture until it is heated through and the cheese has melted.

  5. Incorporate the Bacon:

    • Add the crumbled turkey bacon (or veggie bacon) to the pot.
    • Season the soup with salt and pepper to taste, stirring well to combine all ingredients.

  6. Serve and Garnish:

    • Serve the soup hot, garnished with sliced green onions for an added burst of flavor and color.
