- 4 large potatoes, peeled and diced

Instructions
- Prepare the Vegetables:
- In a large pot, combine the diced potatoes, chopped onion, and chopped celery with the chicken or vegetable broth.
- Bring the mixture to a boil over medium-high heat.
- Simmer the Soup:
- Once boiling, reduce the heat to a simmer.
- Cook for 20-25 minutes, or until the potatoes are tender.
- Mash the Potatoes:
- Using a potato masher, gently mash some of the potatoes in the pot. This will create a creamier texture for the soup.
- Add Cream and Cheese:
- Stir in the heavy cream (or coconut cream) and shredded cheddar cheese.
- Cook the mixture until it is heated through and the cheese has melted.
- Incorporate the Bacon:
- Add the crumbled turkey bacon (or veggie bacon) to the pot.
- Season the soup with salt and pepper to taste, stirring well to combine all ingredients.
- Serve and Garnish:
- Serve the soup hot, garnished with sliced green onions for an added burst of flavor and color.
