Mom’s Baked Cheesy Rice recipe

  • 2 cups vegetable broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup milk (or plant-based milk)
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat Your Oven: Set your oven to 350°F (175°C) to ensure it’s ready for baking.
  2. Combine Ingredients: In a large oven-safe dish, add the uncooked rice, vegetable broth, and olive oil. Stir well to combine.
  3. Mix in the Goodness: Add the milk, shredded cheese, diced bell peppers, frozen peas, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are evenly distributed.
  4. Cover and Bake: Cover the dish with aluminum foil to trap the steam and bake for 30 minutes.
  5. Finish Baking: Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  6. Let Cool: Allow the dish to cool slightly before serving to let the flavors meld together.
