Egyptian Koshari Recipe

Ingredients

  • 1 cup lentils, rinsed
  • 1 cup rice, rinsed
  • 1 cup macaroni
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups vegetable broth
  • Olive oil for frying

Instructions

  1. Cook Lentils:
    In a pot, boil lentils in 3 cups of water for 15-20 minutes until tender. Drain and set aside.
  2. Cook Rice:
    In the same pot, add the vegetable broth and bring to a boil. Stir in rice, cover, and simmer for 15 minutes until cooked.
  3. Cook Macaroni:
    In a separate pot, boil water and cook macaroni according to package instructions. Drain and set aside.
  4. Fry Onions:
    In a skillet, heat olive oil and fry sliced onions until golden brown. Remove and drain on paper towels.
  5. Make Sauce:
    In the same skillet, sauté garlic, then add diced tomatoes, cumin, paprika, salt, and pepper. Cook for 10 minutes.
  6. Combine:
    In a large bowl, layer lentils, rice, macaroni, and top with the tomato sauce and fried onions.
