- 1 cup lentils, rinsed
- 1 cup rice, rinsed
- 1 cup macaroni
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups vegetable broth
- Olive oil for frying
Instructions
- Cook Lentils:
In a pot, boil lentils in 3 cups of water for 15-20 minutes until tender. Drain and set aside. - Cook Rice:
In the same pot, add the vegetable broth and bring to a boil. Stir in rice, cover, and simmer for 15 minutes until cooked. - Cook Macaroni:
In a separate pot, boil water and cook macaroni according to package instructions. Drain and set aside. - Fry Onions:
In a skillet, heat olive oil and fry sliced onions until golden brown. Remove and drain on paper towels. - Make Sauce:
In the same skillet, sauté garlic, then add diced tomatoes, cumin, paprika, salt, and pepper. Cook for 10 minutes. - Combine:
In a large bowl, layer lentils, rice, macaroni, and top with the tomato sauce and fried onions.
