Delicious Egg Cups recipe

  • 6 large eggs
  • 1 cup spinach (chopped)
  • 1/2 cup bell peppers (diced)
  • 1/2 cup cherry tomatoes (halved)
  • 1/2 cup cheese (shredded)
  • Salt and pepper to taste
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray or olive oil to prevent sticking.
  3. In a mixing bowl, whisk the eggs and season with salt and pepper.
  4. Add the chopped spinach, bell peppers, cherry tomatoes, and cheese to the egg mixture. Stir until well combined.
  5. Pour the mixture evenly into the muffin tin cups, filling each about three-quarters full.
  6. Bake for 18-20 minutes or until the eggs are set and slightly golden on top.
  7. Once done, let cool for a few minutes before removing the egg cups from the tin. Enjoy!
