- 6 large eggs
- 1 cup spinach (chopped)
- 1/2 cup bell peppers (diced)
- 1/2 cup cherry tomatoes (halved)
- 1/2 cup cheese (shredded)
- Salt and pepper to taste
- Cooking spray or olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a muffin tin with cooking spray or olive oil to prevent sticking.
- In a mixing bowl, whisk the eggs and season with salt and pepper.
- Add the chopped spinach, bell peppers, cherry tomatoes, and cheese to the egg mixture. Stir until well combined.
- Pour the mixture evenly into the muffin tin cups, filling each about three-quarters full.
- Bake for 18-20 minutes or until the eggs are set and slightly golden on top.
- Once done, let cool for a few minutes before removing the egg cups from the tin. Enjoy!
